WEATHER: Cold and windy. High about 40
We hung out in our motel room in Lubbock while it was cold and windy...wind chill in the teens. Then we drove into town for lunch. We had a chicken chile pepper pizza with a garlic sauce. Really good. Then we drove about 125 miles north. We are staying at a state park outside of Amarillo.
We are in the far north part of a Texas, the part that looks like a narrow vertical rectangle. It is called the Panhandle Plains. We are about 75 miles west of Oklahoma and 75 east of New Mexico.
The state park is called Palo Duro Canyon. It is the second largest canyon in the USA, after the Grand Canyon. It is really pretty. The campground is in the bottom of the canyon.
DINNER: At the Airstram rally potluck, I really liked the stuffed jalapeños that someone had brought, so I tried to copy them for an appetizer. They turned out amazingly well with my improvisations. I cut them lengthwise and removed stems and seeds. I sautéed them a bit on both sides. Then I tore up some of the leftover pizza in teeny bits for the stuffing. I sprinkled Parmesan cheese on top and zapped them in the microwave to warm up everything. How easy for a party! (As long as people like spicy food). For our entree, I made an omelette with more veggies than eggs.....bell pepper, spinach, onions, garlic, potatoes, and mushrooms. Delish!
