We enjoyed staying in a nice hotel. Slept in a bit. We went back to Heather's house to pick up the Airstream. She took us back to the Austin Beer Garden Brewery where we had a great pizza lunch.... with portabellos, roasted garlic, asiago cheese and pesto.
Then we headed west to our campground...Pedernales State Park where we will stay for 4 nights with Alexis. We are in the "hill country", about an hour from Austin. Our plan is to make day trips until we return to Austin on Thursday.
We made a nice campfire and sautéed garlic and onions. I also baked sweet potatoes right in the coals, wrapped in aluminum foil. Then, I finished cooking inside on the Airstream's stove...added some kale to the onions/garlic, then added pumpkin-stuffed raviolis, and topped it with a splash of wine. The sweet potatoes went nicely as a side dish.
The dinette turns into a bed, so that is where Alexis will sleep. Quite cozy!
